Solo is 90% different than multi. Solo is mostly about duffs and zerk with a little arc micro and taking no casualties against mostly mindless waves (even on legendary). To make a map like this is super easy. Just open whatever map(s) you like in Photoshop - set mode to RGB - create a new layer - select clone tool and choose a gritty chalk brush - set clone source to below - sample grass/base texture - clone all the grass/base texture to however you want - hide laye...

Hmmm this idea seems a lot like STB already. It would be more fun if you started with multiple balls and you had to score them at the enemies start location/goal. Then you could do things like shoot with a fetch lightning/dwarfs or use a Trow or FG to try to block like a goalie. And of course strats...

Open a mesh tag in Oak. Right click, New Detail Map (From Terrain). It will do it based on the terrain map it has. You could always edit the terrain map first to suit your needs.
