Other than the Peking Duck, I'd say go see China before the Olympic games, it's changed a lot in just a few years but after the games I predict it'll be nothing but a huge circus...

peru is amazing, as is equador (especially the galapagos if you have lots of money to play with)
australia is very cool too, lots to see and do, quite a unique place.
new zealand is also very cool
Personally, the next countries I'd like to go to are indonesia, malayasia and thailand, but having never been I probably shouldn't suggest them.
